Celebrate Vegan Day with our Carroll’s Heritage Potatoes

Carroll’s Heritage Potatoes hosted one of their  loyal customers, Brown’s Restaurant Chefs in the Spring 2018 and by luck The Newcastle University Nutrition student placements Kyle and Nicole met the Browns chefs while they were on the farm for the 2 week placement studying vegan Diets. They got their take on the vegan diet and how they incorporate our heritage potatoes into their menu to cater for their vegan customers. together we explored the farm, learnt about the growing of Heritage Potatoes, and together we learnt about the importance of Vegan diets.

In the UK, the number of people identifying as vegans has increased by 350%, compared to 10 years ago. It is estimated that around 2% of the UK population is vegetarian which more than 1.2 million people. Within this teenagers make up the highest proportion showing how popular it is in the younger generation. Vegans are estimated to make up less than 1% of the population.

As per ‘The Vegan Plate’, a vegan needs high fibre foods, they can source this from food items such as potatoes; potatoes are an important part of vegan’s daily meals.

Over the past ten years, vegan food products have evolved vastly that they are creating vegan meat substitutes. Seitan is a meat substitute that is produced using wheat gluten and potato protein.
Many convert to veganism for the health benefits, among other environmental and ethical reasons. The vegan diet is filled with healthy super foods, like the humble potato. Try incorporating our potatoes into your vegan diet to reap these great health benefits.

What characteristic would you think about when selecting a potato  for a dish?
If we were to make mashed potato, we’d pick something quite floury (Mayan gold ), if we were making chips or roast potatoes we’d pick something that was just as fluffy textured but will hold its own when cooking and would crisp up well (Aran Victory 1818 ), if we were making a potato salad, we’d pick a firmer, waxier potato that wouldn’t mash up easily (Pink Fir Apple 1850).

Vegan Bunny Chow (Potato, chickpea and spinach curry)

Serves 4
  • 3 tbsp vegetable oil
  • -1 tsp cumin seeds
  • 2 bay leaves
  • -2 white onions
  • 5 cm piece of fresh root ginger (peeled and grated)
  • -3 garlic cloves, minced
  • 1 ½ tbsp. garam masala
  • -1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/8 tsp chilli powder
  • 400g tin tomatoes
  • 2 large Yukon Gold potatoes, peeled and cut into 2cm chunks
  • 400g tinned chickpeas, drained and rinsed
  • -3 tbsp. strong Darjeeling tea
  • 1 tsp salt
  • -1 tsp caster/granulated sugar
  • 1 small mango, peeled and cut into small chunks
  • – 200g spinach
  • 1 small bunch of fresh coriander
  • Put the vegetable oil in a large heavy saucepan and set over a medium heat. When hot, add the cumin seeds and fry until slightly browned. Then add the bay leaves, onion, ginger and garlic and fry for 8 minutes until the onions are soft and dark brown.
  • Add the garam masala, cumin and coriander and cook for 2 minutes, then add the chilli powder, ground turmeric, tinned tomatoes, chickpeas, Darjeeling tea, salt and sugar, and simmer gently for 20-25 minutes until thick and tangy. Add the fresh mango and simmer gently for 5-10 minutes until it softens a little.
  • Finish my stirring through the spinach and fresh chopped coriander.
